ALESSANDRO PAVONI

After honing his culinary skills in his native Lombardy, and working in a number of Michelin-starred restaurants in France and Italy, chef Alessandro Pavoni settled in Australia in 2003, landing the role of Executive Chef at Sydneyā€™s Park Hyatt.

In 2009, he realised his dream of opening his own restaurant andĀ Ormeggio at The SpitĀ was born. Ormeggio holds many accolades, including two coveted Chefā€™s Hats in the prestigious national Good Food Guide, and has been a hatted restaurant since opening.Ā Chiosco by Ormeggio, a real seaside trattoria offering breakfast, lunch and dinner, opened in the marina adjacent to Ormeggio in late 2014 and continues to satisfy both locals and visitors seeking a piece of the Italian Riviera in Sydney.Ā 

In late 2020 Alessandro openedĀ a’Mare, a classic Italian fine-dining restaurant in Crown Sydney, on Sydney’s harbour front. It offers simply delicious nostalgic classics celebrating the regions true traditions, with a focus on old school elegant service.

Ā He loves the challenge of running multiple venues.Ā 

In 2021 he was awarded the Restaurant and Catering Association NSW Restaurateur of the Year.
